Cis-3-hexenyl acetate (also known as cis-3-hexenyl acetate) is a chemical substance with a banana aroma. Its CAS number is 3681-71-8 and its EINECS number is 222-960-1. Its molecular formula is CH3COOCH2CH=CHCH2CH2CH3, and its molecular weight is 142.20. It is mainly used as a food additive and flavoring ingredient in food, tobacco, and daily chemical products. It complies with the national standard GB 28329-2012 and its FEMA number is 3171. The substance is a colorless to pale yellow liquid with a boiling point of 105℃/130 torr and a specific gravity of 0.896-0.901. It is almost insoluble in water but soluble in ethanol. The product is packaged in galvanized iron drums or polyethylene plastic drums with a net weight of 175 kg. It is irritating when it comes into contact with eyes or skin. Immediate rinsing and medical attention are required. Protective clothing should be worn during operation.

cis-3-Hexen-1 -y 1-acetate has a powerful green, floral note reminiscent of banana. It may be prepared by acetylation of the corresponding alcohol.

Reported found in apple, bilberry, guava, strawberry, black and green tea, yellow and purple passion fruit, citrus peel oils, melon, peach, raspberry, pear, pineapple, melon, celery, tomato, corn mint oil, spearmint oil, brandies, grape wines, soybeans, olive, plum, plumcot, starfruit, mango, cauliflower, dill, lovage, corn oil, nectarines, Chinese quince and chamomile oil.

cis-3-Hexen-1 -y 1-acetate is a volatile organic compound widely found in various plants and released in large quantities when plants are subjected to biotic or abiotic stress. Studies have shown that leaf acetate can act as an early warning signal, stimulating plant immunity and resistance, and enhancing plant disease and pest resistance. In addition, cis-3-Hexen-1 -y 1-acetate has a "green" odor, which can impart aroma and flavor to natural foods such as vegetables and fruits, and it is widely used as an antioxidant, colorant, flavoring agent, and seasoning.

A solution of the precursor compound alkyne (20.0 mmol), THF (20 mL), tetrabutylborohydride (2.57 mg, 10.0 μmol), and Pd nanoparticles in DMF was placed in a 100 mL glass autoclave. The autoclave was equipped with a magnetic stir bar, a pressure gauge, and a gas injection tube connected to a hydrogen source. The vessel was then placed in a water bath maintained at 30 °C, and hydrogen gas was introduced into a Chemicalbook autoclave at a pressure of 8 atm. The reaction mixture was vigorously stirred (1000 rpm) for 5 minutes. After carefully releasing the hydrogen gas, the reaction mixture was analyzed by gas chromatography. The reaction solution was poured into 80 mL of water. The separated organic layer was washed with water (20 mL × 5, 10 mL × 5) to remove tetrahydrofuran. The resulting organic layer was dried over anhydrous Na₂SO₄, and the desiccant was removed by filtration to obtain acetic acid leaf alcohol ester.

Application of cis-3-Hexenyl Acetate

Leaf Acetate increased leaf-feeding herbivores’ egg predation rates by a generalist predator. As a consequence, a plant could reduce the number of herbivores by more than 90% by releasing volatiles.

It can be used as a top note to activate floral, fruity, and minty notes in edible and cosmetic fragrances.
