Metatartaric acid (C6H10O11) is an acidity regulator, a light, porous, pale yellow solid with complexing properties. It can combine with potassium or calcium ions of tartrates to form soluble complexes, keeping the tartrates in a dissolved state. It is widely used in canned grapes and wine to prevent the formation of tartrate precipitates. China's *Hygienic Standard for the Use of Food Additives* (GB2760) stipulates that food-grade metatartaric acid can be added to canned grapes in appropriate amounts as needed, with an actual addition of approximately 20 g/kg. However, the German wine law and the EU-Canada wine agreement allow for an addition of 100 g/L. Currently, the testing method for food-grade metatartaric acid is the spectrophotometric method published by the International Organisation of Vine and Wine (OIV). This method is complex and cumbersome, and its repeatability is difficult to control in actual testing.
Application of Metatartaric acid
This product can be used to prepare a food dewaxing cleaning agent. It is prepared by mixing 5-8% nonionic polyacrylamide, 4-7% alkylphenol polyoxyethylene ether, 10-15% food-grade metatartaric acid with a portion of deionized water and refrigerating the mixture. Then, it is mixed with 5-7% heat-fused fruit acid, 6-8% methyl hydroxypropyl cellulose, 5-7% sodium dodecylbenzene sulfonate, 5-7% ethanol, and 5-7% sodium bicarbonate solution with a mass concentration of 1-2%, along with the remaining deionized water. This cleaning agent can effectively remove general dirt and hard impurities from food surfaces, and is particularly effective at removing wax coatings from food surfaces.
