Solubility characteristics: Insoluble in cold water and cold ethanol, soluble in hot ethanol and hot fats; forms a homogeneous emulsion upon heating and stirring in water. Surface activity (emulsification and dispersion): Amphiphilic molecule: Possesses both a hydrophilic phosphocholine head group and a lipophilic saturated fatty acid tail chain. Bilayer structure: Easily self-assembles in water to form a stable biomimetic bilayer (liposomes).
