High physicochemical stability: Extremely low iodine value, not easily oxidized by air, not easily deteriorated by heat, and not easily discolored or smelly. Acid and alkali resistance: Stable over a wide pH range (4.0 - 10.0), not easily hydrolyzed. Thermal stability: Melting point significantly higher than ordinary lecithin, with a more stable structure upon heating. Solubility characteristics: Insoluble in cold water and cold ethanol, soluble in hot ethanol and hot fats; forms a homogeneous emulsion upon heating and stirring in water. Surface activity (emulsification and dispersion): Amphiphilic molecule: Possesses both a hydrophilic phosphocholine head group and a lipophilic saturated fatty acid tail chain. Bilayer structure: Easily self-assembles in water to form a stable biomimetic bilayer (liposomes). Excellent emulsification: Significantly reduces oil-water interfacial tension, producing emulsions with extremely small and uniform particle size. Highly skin-friendly biological properties: Structure highly similar to human cell membranes, exhibiting excellent biocompatibility. Barrier repair: Integrates into the stratum corneum, replenishes the intercellular matrix, and repairs damaged skin barriers.
